Tomme de Fontanay has a creamy, lactic and herbacious taste with a firm texture. First aged for 2 to 3 months, then a blend of herbs is added to the rind and the cheese is aged for one more month. Tomme de Fontanay is aged by the famed cheese affineur Rodolphe le Meunier. Thanks to his meticulous care, the final result is a toothsome creamy cheese. The flavors of the herb coating permeate the semi-firm cheese without overwhelming the delicate nature of its interior. The final product is an exquisite cheese with a rich and perfectly balanced, herbacious flavor.
