Our trout eggs and caviar are supplied by Caviar Perle Noire, a French company based in the enchanting region of Périgord Noir in Dordogne. A quaint and unspoilt area home to historic towns, vineyards, beautiful villages and wonderful gastronomy, it produces some of the finest trout eggs and caviar in the world. Originating from the Oncorhynchus mykiss (Rainbow Trout) the trout eggs are collected every December when the adult fish reach one to two years old, and lightly salted before being packaged.
