Choose quality fuel

The fuel you use on your BBQ can dramatically impact the flavour. A safe option is to use a form of lumpwood charcoal, such as our Purefire 5K lumpwood charcoal. Prep

Your grill needs to be hot, but not too hot – if you can’t stand close to it then it’s too hot. Light your BBQ in advance so the flames have time to die down before you start cooking. The charcoal should have burned down and be coated in white ash.
Sea salt not table salt
Take your meat out of the fridge before you start cooking and allow it to come up to room temperature. Seasoning with sea salt is preferable to table salt, which is way too salty and contains anti-caking agents. Don’t be afraid to season generously with your salt – lots will fall off before and during cooking.

BBQ recipe ideas

There are hundreds of different BBQ recipes out there.
One that we recommend is this Arabic mixed grill recipe from UAE-base Syrian chef Zafer Al-Fares. Featuring different forms of grilled lamb and chicken, it’s a delicious tribute to the rich culinary culture of the UAE.

Ingredients:

• 80 grams of Prime Gourmet’s New Zealand grass-fed mince lamb from Silver Fern Farms
• 70 grams of Prime Gourmet’s New Zealand grass-fed lamb diced cubes from Silver Fern Farms
• 80 grams of Prime Gourmet’s Tegel or Bostock Brothers chicken breasts, cubed
• 125 grams of Prime Gourmet’s lamb chops from Silver Fern Farms
• 1 onion
• 1 tomato
• Parsley
• 1 ½ tablespoon of yoghurt
• 2 teaspoons of corn oil
• Teaspoon of salt
• Teaspoon of black pepper
• Teaspoon of nutmeg powder
• Teaspoon of chili paste
• Garlic, chopped
• ½ tablespoon of vinegar

Directions:

1. In a bowl, add the minced lamb, onion, parsley, salt and black pepper. Mix well until it is a smooth dough. Divide into ovals and allow to chill in a cool temperature for 30 minutes.
2. In a separate mixing bowl, marinate the lamb cubes with onion, oil, salt, black pepper and nutmeg powder.
3. In another bowl, marinate the lamb chop with oil, onion, salt, chili paste and black pepper powder.
4. Marinate the chicken cubes with yoghurt, vinegar, salt, corn oil, black pepper and garlic in a separate mixing bowl.
5. Cut an onion and a tomato in half, season them with salt, pepper and oil.
6. Thread your lamb kebab, lamb chop, kofta, and chicken kebab in metal skewers, alternating meat cubes with tomato and onion.
7. Heat the BBQ grill and when ready, place the skewers on the grill and cook on each side for two to three minutes.
8. Garnish with parsley sprig and serve with garlic sauce and fries on the side.
