How to cook an irresistible slow roast lamb shoulder
The lamb shoulder is a strong and well used body part, and that means it is full of vibrant flavour. In fact, you could argue that it is even tastier than lamb leg. It can take a while to soften, and so the best way to cook it is through slow roasting. The slow roasting process gently coaxes out the delicate, nuanced tastes of the lamb, and preserves its trademark juiciness and velvety softness.

Perhaps best of all, it’s super easy to master too. Just marinate your lamb shoulder in your choice of seasonings and herbs (you don’t have to stick to our suggestions below), throw it in the oven for roughly five hours, and serve with creamy mashed potatoes, fresh seasonal vegetables, and lots of gravy.
Ingredients
- 1 whole lamb shoulder (approx 1.5kg to 2kg)
- 4 garlic cloves
- 3 large onions
- 8 sprigs of rosemary (or your choice of herb)
- Salt
- Pepper
- Olive oil
Method
- Preheat the oven to around 160C.
- Marinate the lamb with olive oil, salt, and pepper.
- Using a sharp knife, pierce the lamb shoulder all over and insert garlic, rosemary (or your choice of herbs) into the holes.
- Cut the onions into large disks and place them at the bottom of a roasting tin. Put the lamb on top of the onions, and pour water or lamb stock around it.
- Cover the tin with foil and roast for between three and a half to five hours, until the meat is tender (exact cooking time will depend on the size of the shoulder).
- Around 20 to 30 minutes before it's finished cooking, take the foil off so that the meat can brown.
- Take it out of the oven and leave it to stand for half an hour before serving.
