Quercyfeuille Romarin (Goat's Milk; with Rosemary) - 180g
Quercyfeuille a young cheese made from raw goat’s milk named after 'Quercy' where it is produced in the Western France. The cheese is "fermier" as it occurs on the farm where goats are reared. The interior paste has a light, soft fudge-like texture, and decorated with wild mulberry leaves. After two weeks of maturation, the cheese can be eaten although when left to mature, its moisture evaporates resulting in a firmer, drier texture with a light white and yellow rind.
