Fresh Bluefin Tuna
Authentic Red Tuna (Thunnus Thynnus), wild from Tarifa (Spain). Bluefin tuna is the largest of the tuna species and can reach up to 4 meters and 600 kg.
JC Mackintosh has managed to innovate the art of fishing bluefin tuna travelling to Japan to learn the Greenstick technique, a system that guarantees sustainable and respectful fishing and a capturing process that avoids animal stress.
Additionally, we apply a Japanese sacrifice technique called Ike Jime through which we immediately cool the tuna in order to preserve its organoleptic properties.
It has a distinctive medium-full flavor and firm, “meaty” texture with large flakes. It is best served as sushi or cooked rare to medium-rare
