Modeled after Chaource, a regional favorite, the Fleur de Nuit is a soft ripened, cow's milk cheese that has a butter fat content of a double cream. The flavors tend to be a tad earthier with a bright and spring like finish.

Similar to Chaource or Brillat Savarin, depending on state of aging.
